Lamb noisettes are small medallions made from the eye muscle of the loin, or saddle. Popular both for home cooking and fine dining, they are lean, flavoursome and quick to cook. The Black Farmer’s lamb noisettes are stunning with fondant potatoes, green beans and a rich lamb sauce.

When choosing a cut of lamb, look for firm, fine-grained meat with a velvety texture; it should be moist, rather than dry or slimy.


The Black Farmer works with the best local suppliers. We source highest-quality lamb from the South West of England, which is fed on grass and free to graze the lush fields that abound in the area. To maintain the freshness and quality of Lamb Noisettes, it is recommended to store them in the refrigerator at a temperature of 32°F to 40°F (0°C to 4°C). Keep the Lamb Noisettes in their original packaging or transfer them to an airtight container or resealable plastic bag to prevent any cross-contamination or exposure to odors. Properly stored, Lamb Noisettes can be refrigerated for up to 2-3 days. If you wish to extend their shelf life, you can also freeze the Lamb Noisettes. Wrap them individually in plastic wrap or place them in airtight freezer-safe containers or bags before placing them in the freezer. Frozen Lamb Noisettes can maintain their quality for approximately 2-3 months. Remember to thaw frozen Lamb Noisettes in the refrigerator before cooking for the best results.

Your item will arrive in a 100% recycled box lovingly packed with FSC-certified shredded spruce from Britain and Sweden, natural sheep’s wool insulation and non-toxic chilled gel packs, all of which can be reused, composted or recycled. To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.


Here’s cooking instruction for Lamb Noisettes:

1. Preheat your oven to 400°F (200°C).
2. Season the lamb noisettes with salt and pepper on both sides.
3. Heat a large oven-safe skillet over medium-high heat and add a little oil. Once the oil is hot, sear the lamb noisettes for about 2-3 minutes on each side until they develop a nice brown crust.
4. Transfer the skillet with the lamb into the preheated oven and cook for an additional 8-10 minutes for medium-rare, or longer if you prefer it more well done. Remember to adjust the cooking time based on the thickness of the lamb noisettes.
5. Remove the skillet from the oven and transfer the lamb noisettes to a cutting board. Let them rest for a few minutes to allow the juices to redistribute.
6. While the lamb is resting, you can prepare a simple sauce by deglazing the skillet with a splash of red wine or chicken broth. Scrape the bottom of the skillet to incorporate the flavorful bits. Add a knob of butter and any desired herbs or spices to enhance the sauce’s flavor.
7. Slice the rested lamb noisettes into thick medallions and serve them drizzled with the sauce. You can also serve them with roasted vegetables, mashed potatoes, or a fresh salad on the side.
