Flat iron steak is a modern cut, which butchers trim from the the featherblade (or spale bone) shoulder of beef. This makes it good value. The resulting flat iron steak is easy to cook and great to marinate. This produces a flavourful portion of meat, though it is slightly tougher than other cuts. You can cook flat iron quickly or slowly, depending on the recipe.

We source local meat from farms in Wiltshire, Somerset and the South West, and make sure that we get the absolute best and most sustainable breeds for the season. Our free range cows feed on grass and lead happy lives in the great British countryside. By working with local produce and farmers, we promote and encourage a sustainable and ethical approach to meat eating. This reduces animal stress and lowers food miles as much as possible.

STORAGE ADVICE
To maintain the quality and freshness of Flat Iron Steak, proper storage is essential. Store the Flat Iron Steak in the refrigerator at a temperature below 40°F (4°C). It is recommended to keep the steak in its original packaging or transfer it to an airtight container or resealable plastic bag to prevent any cross-contamination or exposure to air. Properly stored, the Flat Iron Steak can be refrigerated for up to 3-4 days. If you want to extend its shelf life, you can also freeze the steak. Wrap it tightly in plastic wrap or aluminum foil and place it in a freezer-safe container or bag. Frozen Flat Iron Steak can maintain its quality for approximately 6-12 months. When ready to use, thaw the steak in the refrigerator before cooking. It is important to cook thawed steak promptly and follow safe food handling practices for the best taste and safety.

Your item will arrive in a 100% recycled box lovingly packed with FSC-certified shredded spruce from Britain and Sweden, natural sheep’s wool insulation and non-toxic chilled gel packs, all of which can be reused, composted or recycled. To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.

Here’s a cooking instruction for a Flat Iron Steak:

1. Start by preheating your grill or a cast-iron skillet over medium-high heat. It’s important to get the cooking surface hot to achieve a nice sear on the steak.
2. While the grill or skillet is heating up, season your Flat Iron Steak with salt, pepper, and any additional seasonings of your choice. Let the steak sit at room temperature for about 20-30 minutes to allow the seasoning to penetrate the meat.
3. Once the grill or skillet is hot, place the seasoned Flat Iron Steak on the cooking surface. Cook the steak for about 4-5 minutes on each side for medium-rare doneness. Adjust the cooking time based on your preferred level of doneness. For medium, cook for about 5-6 minutes on each side, and for medium-well, cook for about 6-7 minutes on each side.

5. After cooking, remove the Flat Iron Steak from the grill or skillet and let it rest for a few minutes. This allows the juices to redistribute throughout the meat, resulting in a more flavorful and tender steak.
6. Once the steak has rested, slice it against the grain into thin strips. This helps to maximize tenderness.

Remember, cooking times may vary depending on the thickness of the steak and the heat of your grill or skillet. It’s always a good idea to use a meat thermometer to ensure the steak reaches your desired internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, or 150°F (66°C) for medium-well.
