Ingredients

  • 2 packs of The Black Farmer Pork Loin Steaks
  • 1 x chicken or vegetable stock cube
  • 1 tbsp olive oil
  • 6 fresh sage leaves, chopped
  • 1 Bramley apple, peeled, cored and cut into eight sections
  • 25g butter
  • 1 tsp sugar
  • 1 tbsp lemon juice
  • splash (2 tbs) of cider

Method

Make a paste from the olive oil, three of the chopped sage leaves and stock cube.  Spread each of the Steaks with the paste, then cook the Loin Steaks as per pack instructions.

While the steaks are cooking, gently melt the butter in a frying pan.  Add the lemon juice and cider and dissolve the sugar into it. Add the chopped sage and the apple sections and gently brown the apples to caramelise them.  Keep turning until brown all over.  Take them off the heat and let them continue to cook in their own juice.

Plate up the steaks and pour sauce over. Serve with vegetables of your choice.
