Skirt steak is an underrated cut of beef. It comes from the plate of the cow, which is situated after the brisket and before the flank. It is the ideal cut to use in stir-fries, as it’s richly flavoured. Skirt is not the most tender cut but its punchy flavour works beautifully in Mexican dishes. We love quickly grilling or pan-searing skirt steak and using it in fajitas.

We source local meat from farms in Wiltshire, Somerset and the South West. The Black Farmer makes sure that we get the absolute best and most sustainable breeds for the season. Our free range cows feed on grass and lead happy lives in the great British countryside. By working with local produce and farmers, we promote and encourage a sustainable and ethical approach to meat eating. This reduces animal stress and lowers food miles as much as possible.

STORAGE ADVICE
To maintain the quality and freshness of skirt steak, it is recommended to store it in the refrigerator at a temperature of 32°F to 40°F (0°C to 4°C). Place the skirt steak in an airtight container or wrap it tightly in plastic wrap to prevent any exposure to air or odors. Properly stored, skirt steak can be refrigerated for up to 3-4 days. If you plan to store it for a longer period, you can also freeze the skirt steak. Wrap it tightly in plastic wrap and aluminum foil or place it in a freezer-safe bag or container. Frozen skirt steak can maintain its quality for approximately 2-3 months. When ready to use, thaw the steak in the refrigerator before cooking.

Your item will arrive in a 100% recycled box lovingly packed with FSC-certified shredded spruce from Britain and Sweden, natural sheep’s wool insulation and non-toxic chilled gel packs, all of which can be reused, composted or recycled. To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.

Here’s cooking instruction for skirt steak:

1. Preheat your grill or stovetop pan to high heat.
2. Take the skirt steak out of the refrigerator and let it come to room temperature for about 20 minutes.
3. Season the skirt steak with salt, pepper, and any other desired seasonings. You can also marinate it for additional flavor if you prefer.
4. Place the skirt steak on the hot grill or pan and cook for about 3-4 minutes per side for medium-rare. Adjust the cooking time based on your preferred level of doneness.
5. Avoid flipping the steak too often. Allow it to sear and develop a nice crust on each side.
6. Once cooked to your desired doneness, remove the skirt steak from the heat and let it rest for a few minutes. This allows the juices to redistribute and the steak to become more tender.
7. After resting, slice the skirt steak against the grain into thin strips. This will help ensure tenderness.
8. Serve the skirt steak immediately and enjoy!

Remember, cooking times may vary depending on the thickness of the skirt steak and your cooking equipment. It’s always a good idea to use a meat thermometer to check the internal temperature for your desired level of doneness.
