A classic and versatile mint sauce.  Well balanced, it is not too sweet and not too tangy.  Traditionally used to accompany lamb dishes it is equally good with chicken and other meats.  It adds real flavour when whizzed into soups, mixed with yoghurt for a quick dip, or for a minty pesto.  It’s also particularly good with roasted courgettes and much more.
