When I cook bacon I want the piece of bacon that I put on my plate to be the same size as the piece I put in the pan.

So I made sure that my dry cured bacon not only tastes delicious but does not shrink.

Too much commercially available bacon is injected with so much water that when you cook it and the water comes out, it shrinks and leaves an unpleasant scum in the pan.
