To ensure the optimal freshness and quality of your Whole Goose, we recommend following these storage guidelines:

Refrigeration: Upon receiving your Whole Goose, promptly store it in the refrigerator at a temperature between 32°F (0°C) and 40°F (4°C). Refrigeration helps inhibit bacterial growth and preserves the goose’s freshness.

Packaging: If the goose is in an unopened vacuum-sealed package, you can store it directly as is. If the packaging has been opened, wrap the goose tightly in plastic wrap or place it in an airtight container to prevent exposure to air and moisture.

Airtight Container: Utilize an airtight container or wrap the goose securely to maintain its moisture content and prevent it from absorbing any unwanted odors from other foods in the refrigerator.

Avoid Cross-Contamination: When storing other food items in the same refrigerator, it’s crucial to separate them from the Whole Goose to prevent cross-contamination. Keep the goose on a separate shelf or in a designated area.

Use-By Date: Check the “Use-By” or “Best Before” date on the packaging and make sure to cook and consume the Whole Goose before this date for optimal freshness and flavor. If the goose has exceeded the recommended date, it is advisable to discard it.

Your item will arrive in a 100% recycled box lovingly packed with FSC-certified shredded spruce from Britain and Sweden, natural sheep’s wool insulation and non-toxic chilled gel packs, all of which can be reused, composted or recycled. To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.

Thawing: If your Whole Goose is frozen, it’s important to thaw it thoroughly before cooking. Place the goose in its original packaging in the refrigerator and allow it to thaw for approximately 24-48 hours. Ensure that the goose is fully thawed before proceeding with cooking.

Preheat your oven to 325°F (163°C). Remove the thawed goose from its packaging and pat it dry with paper towels.

Seasoning: Rub the goose generously with your preferred seasonings, such as salt, pepper, herbs, or spices. You can also stuff the cavity with aromatics like onion, garlic, herbs, or citrus fruits for added flavor.

Roasting: Place the seasoned goose on a rack in a roasting pan, breast-side up. Roast the goose in the preheated oven for approximately 20 minutes per pound (0.45 kg), or until the internal temperature of the thickest part of the thigh reaches 165°F (74°C) on a meat thermometer.

Basting: During the roasting process, baste the goose every 30 minutes with its own drippings or a mixture of melted butter and herbs. Basting helps to keep the meat moist and enhances the flavor.

Resting: Once the goose is cooked, remove it from the oven and let it rest for about 20 minutes before carving. This resting period allows the juices to redistribute, resulting in tender, juicy meat.

Carving: Carve the Whole Goose by separating the legs and wings from the body. Then, carefully carve the breast meat, following the bone structure. Serve the succulent slices on a platter and enjoy!

Note: Cooking times may vary depending on the size of the Whole Goose, so it’s important to use a meat thermometer to ensure the meat is cooked to the recommended internal temperature of 165°F (74°C) for safe consumption.
