Typically used in savoury cooking, crushed chillies are occasionally used in desserts and blends well with chocolate. Add to curries and Mexican dishes for a robust heat. Also great to add warmth to marinades, dressings and stir fries or sprinkled over pizzas.
Hot and Spicy Potato Wedges
Ingredients

1. Cut the potatoes into wedges (medium to 6, large to 8)
2. To make them crisp, soak in water for 5 minutes to remove the starch. Preheat the oven 220C.
3. Put the salt into boiling water and boil the potatoes for 6 minutes. Pat dry when cooled.
4. Put all the ingredients into a bowl and mix well. Finely chop the garlic.
5. Add the cooked potatoes into the bowl and combine with the sauce.
6. Transfer to a baking tray and put in the oven for 20 minutes.
7. Place on a serving dish, squeeze over the lemon and serve.
Asian style beef salad
Ingredients

- Finely slice the roast beef, red onion and celery. Rehydrate the vermicelli. Keep to one side.
- Heat the oil in a pan, add the other sliced onion
- Make sure the onions don’t burnt but fry to a dark brown evenly. Transfer to kitchen paper.
- Mix all the dressing ingredients together.
- Add the beef, red onion, coriander, vermicelli, celery and half the fried onions and mix together.
- Arrange Step 5 on a dish and sprinkle with the remaining fried onions. Pour over the dressing from Step 4, it’s ready to enjoy.
