Grilled Spicy Muscovado Chicken Skewers
Ingredients:
• 1.5 lbs (680g) boneless chicken breasts, cut into chunks
• 1/4 cup soy sauce
• 2 tablespoons Spicy Muscovado Marinade
• 2 tablespoons olive oil
• 2 cloves garlic, minced
• 1 tablespoon fresh ginger, grated
• 1 tablespoon lime juice
• Bamboo skewers, soaked in water for 30 minutes
Instructions:
1. In a mixing bowl, combine the soy sauce, Spicy Muscovado Marinade, olive oil, minced garlic, grated ginger, and lime juice. Stir well to combine.
2. Add the chicken chunks to the marinade and toss until they are evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or overnight for best results.
3. Preheat your grill to medium-high heat.
4. Thread the marinated chicken chunks onto the soaked bamboo skewers.
5. Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
6. Remove the skewers from the grill and let them rest for a few minutes.
7. Serve the Grilled Spicy Muscovado Chicken Skewers with a side of rice or salad. You can also garnish with chopped cilantro or a squeeze of lime juice for extra freshness.
