Osso Bucco is an Italian term that means ‘bone with a hole’. It refers to the marrow hole that is at the top centre of these cuts. Osso Bucco is a cross-cut veal shank that is quite pale in colour and has a refined, subtle flavour of mild beef. The marrow melts with slow cooking to create a tender, gelatinous and delicious meat.

We source local meat from farms in Wiltshire, Somerset and the South West. The Black Farmer makes sure that we get the absolute best and most sustainable breeds for the season. Our free range cows feed on grass and lead happy lives in the great British countryside. By working with local produce and farmers, we promote and encourage a sustainable and ethical approach to meat eating. This reduces animal stress and lowers food miles as much as possible.

STORAGE ADVICE
To maintain the freshness and quality of Osso Bucco, it is recommended to store it in the refrigerator at a temperature of 32°F to 40°F (0°C to 4°C). Place the Osso Bucco in an airtight container or wrap it tightly in plastic wrap to prevent any exposure to air or odors. Stored correctly, Osso Bucco can be refrigerated for up to 2-3 days. If you plan to store it for a longer period, you can also freeze it. Wrap the Osso Bucco tightly in plastic wrap and aluminum foil or place it in a freezer-safe bag or container. Frozen Osso Bucco can maintain its quality for approximately 2-3 months. When ready to use, thaw it in the refrigerator before cooking for the best results.

Your item will arrive in a 100% recycled box lovingly packed with FSC-certified shredded spruce from Britain and Sweden, natural sheep’s wool insulation and non-toxic chilled gel packs, all of which can be reused, composted or recycled. To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.

Here’s cooking instruction for Osso Bucco:

1. Preheat your oven to 350°F (175°C).
2. Take the already made Osso Bucco out of the refrigerator and let it come to room temperature for about 15-20 minutes.
3. Place the Osso Bucco in an oven-safe dish or baking tray, ensuring that the meat is spread out in a single layer.
4. Cover the dish with aluminum foil to prevent the meat from drying out during reheating.
5. Place the dish in the preheated oven and let it cook for approximately 20-30 minutes, or until the meat is heated through.
6. After the initial heating time, remove the aluminum foil and check the internal temperature of the meat using a meat thermometer. It should read at least 165°F (74°C) to ensure it’s thoroughly heated.
7. If the internal temperature is not reached, continue cooking for an additional 5-10 minutes and check again.
8. Once the Osso Bucco is heated through, carefully remove it from the oven.
9. Serve the Osso Bucco with its sauce and any desired accompaniments, such as mashed potatoes or risotto.

Note: These instructions are for reheating already made Osso Bucco, so it may not have the same tenderness as freshly cooked Osso Bucco. Adjust the heating time accordingly based on the thickness of the meat and your desired level of warmth.
