Reduce the heat to low, cover the pot, and simmer for 1 to 2 hours until the mutton becomes tender and the flavors develop. Alternatively, you can use a pressure cooker to expedite the cooking process. Transfer the seared mutton to the pressure cooker, add some water or stock, and cook on high pressure for about 25-30 minutes.
5. Check for doneness: After the cooking time is complete, check the mutton for tenderness. It should be easily pierced with a fork and should not be tough. If it’s not fully cooked, continue cooking for a few more minutes.
6. Rest and serve: Once the mutton is cooked to your desired tenderness, remove it from the heat and let it rest for a few minutes. This allows the juices to redistribute and enhances the flavors. Serve the mutton hot with rice, bread, or naan, and enjoy!
