STORAGE ADVICE
To maintain the freshness and quality of a Leg of Goat, it is recommended to store it in the refrigerator at a temperature between 32°F to 40°F (0°C to 4°C). Place the leg of goat in an airtight container or wrap it tightly in plastic wrap or aluminum foil to prevent air exposure and contamination. Properly stored, the leg of goat can be refrigerated for up to 3-4 days. If you wish to store it for a longer period, you can freeze the leg of goat. Wrap it securely in plastic wrap and aluminum foil or place it in a freezer-safe bag or container. Frozen leg of goat can maintain its quality for approximately 6-9 months. Before cooking, make sure to thaw the leg of goat in the refrigerator.

Your item will arrive in a 100% recycled box lovingly packed with FSC-certified shredded spruce from Britain and Sweden, natural sheep’s wool insulation and non-toxic chilled gel packs, all of which can be reused, composted or recycled. To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.

Here’s cooking instruction for a leg of goat:

1. Preheat your oven to 325°F (165°C).
2. Rinse the leg of goat under cold water and pat it dry with paper towels.
3. In a small bowl, combine your preferred spices and herbs. Common choices include garlic powder, onion powder, dried rosemary, dried thyme, salt, and pepper. Mix well.
4. Rub the spice mixture all over the leg of goat, making sure to coat it evenly. You can also drizzle some olive oil over the meat to enhance the flavors.
5. Place the leg of goat on a roasting rack inside a roasting pan. This will allow the heat to circulate evenly around the meat.
6. Insert a meat thermometer into the thickest part of the leg, avoiding the bone. This will help you monitor the internal temperature.
7. Place the roasting pan in the preheated oven and cook the leg of goat for approximately 20 minutes per pound (45 minutes per kilogram). This will vary depending on the size of the leg, so it’s essential to use the meat thermometer to determine when it’s cooked to your desired doneness.
8. For medium-rare, cook until the internal temperature reaches 145°F (63°C). For medium, cook until it reaches 160°F (71°C). Adjust the cooking time accordingly.
9. Once the leg of goat reaches your desired temperature, remove it from the oven and tent it with aluminum foil. Let it rest for about 15-20 minutes to allow the juices to redistribute and the meat to become tender.
10. After resting, carve the leg of goat into slices and serve it with your favorite side dishes, such as roasted vegetables, potatoes, or a fresh salad.
