Expert producers cure the ham on the bone for two weeks before deboning and drying the joint by hanging in the fridge. Off cuts are a by product of traditional butchery. Ham off cuts are an easy way to add seasoning, colour and texture to a wide range of sauces. We love using them in sandwiches. Make a pile of ham on buttered, crusty bread. The Black Farmer ham off cuts are suitable for home freezing. If you choose to freeze your meat, make sure you defrost it thoroughly before cooking. The easiest way is simply to leave in the fridge overnight.
