Using lean hind quarter muscle, our butchers cut the muscle into strips. Best cooked in a stir fry, stroganoff and Mexican dishes. It’s super quick and easy.

Thinly cut strips of fresh beef, the tail end of the fillet, providing supremely soft and tender meat. Cut into thin strips, the thin part of the fillet is ideal for quick, luxurious stir-fries such as the famous Beef Stroganoff.


All of our beef is sourced locally in the West Country, is free range, and grass fed on the lush fields that abound in the area. We do top up from local farms across Wiltshire, Somerset and the South West depending on breeds and season. Along with professionals at Wiltshire College in Lackham we work with the Cows on a day to day basis. This ensures high standards in animal welfare prior to the journeys to a local abattoir, which reduces animal stress and lowers food miles as much as possible.


Undoubtedly, beef steaks are more tender and most delicious when the meat has been well aged under controlled conditions. With more than 10 years experience, our highly skilled expert butchers guarantee every cut will be of the highest standard prepared in the traditional way.


Suitable for freezing, vacuum-packing extends life, for months as fresh meat, defrost very slowly, ideally in a refrigerator overnight.

Recipe and cooking instructions for beef stir fry:


  • 500g stir fry beef strips
  • 2 tbsp balsamic vinegar
  • 2 tbsp dark soy sauce
  • 2 tbsp Worcestershire sauce
  • small bunch spring onions, sliced on the diagonal
  • 200g roasted antipasto peppers in oil or vinegar, drained and sliced
  • boiled rice, to serve


  • STEP 1

    Put the beef in a medium non-metallic bowl and cover with the vinegar, soy and Worcestershire sauce. Leave to marinate for 20 mins, or if you have the time, overnight.

  • STEP 2

    Heat a small dry wok until it’s very hot. Tip in the beef, marinade and spring onions, stir fry for 2 mins. Add the roasted peppers, then stir fry for a further 2 mins. Divide the stir fry between shallow bowls and serve with some boiled rice.
