Here’s a basic cooking instruction for boneless shoulder of pork with the rind on and scored:

  1. Preheat the oven to 325°F (163°C).
  2. Take the boneless shoulder of pork and pat it dry with paper towels. This will help the skin to become crispy during cooking.
  3. Rub the pork shoulder with your choice of seasonings. A simple combination of salt, pepper, garlic powder, and paprika works well. Make sure to season the meat on all sides, including the scored rind.
  4. Place the pork shoulder in a roasting pan with the rind facing upwards. The roasting pan should be large enough to accommodate the pork and have a rim to catch any drippings.
  5. Roast the pork in the preheated oven for about 2.5 to 3 hours, or until the internal temperature reaches 145°F (63°C) on a meat thermometer. This will result in medium doneness, with a slightly pink center. Adjust the cooking time if you prefer the pork to be more well-done or less cooked.
  6. After the pork has cooked for about 1.5 to 2 hours, the rind should start to become crispy. If it hasn’t crisped up enough, you can increase the oven temperature to 425°F (220°C) for the last 20-30 minutes of cooking or switch to the broiler mode, watching closely to avoid burning.
  7. Once the pork reaches the desired internal temperature and the rind is crispy, remove it from the oven. Allow the pork to rest for about 10-15 minutes before carving. This resting period helps the juices redistribute and ensures a moist and tender roast.
  8. Slice the pork shoulder into thin slices and serve it with your favorite sides like roasted vegetables, mashed potatoes, or a fresh salad.

Remember, cooking times may vary depending on the size and thickness of the pork shoulder, so it’s always best to use a meat thermometer to check for doneness. Enjoy your delicious boneless shoulder of pork!
