Gluten Free Pancakes

Recipe from David Harris, Dublin

Multiply these by the number of people you are serving.

30g GF plain flour (Doves or similar)
1 egg
1/4 tsp baking soda
1 tsp. sugar/syrup or agave
1 tbls Sparkling Mineral Water

Just mix all the ingredients together in a bowl. Heat a small amount of oil in a pan. Drop spoonfuls of batter into pan. With the back of the spoon spread out in a circle. Cook until a few holes appear in batter. Flip to brown other side.

For a fruity pancake add a handful of blueberries to the batter.
