The Black Farmer Sausages with Spicy Tomato Lentils

Serves 6

1 jar Sweet & Spicy Tomato Sauce
12 Black Farmer Sausages, grilled
2 tbsp olive oil
2 onions, chopped
1 carrot, diced
3 cloves garlic, crushed and chopped
large sprig rosemary
300g Puy lentils
850 ml chicken stock
2 tbsp flat leaf parsley chopped

Heat the oil in a large frying pan, when hot add the onions, carrots, garlic and rosemary. Cook gently without browning for 5-10 minutes, until the onions are soft and translucent. Add the lentil, stock, Sweet & Spicy Tomato Sauce and sausages. Season, bring to the boil then cover and simmer for about 40 minutes until the lentils are tender. Before serving stir in a handful of chopped flat leaf parsley. Serve with a dressed green salad.
