October 10th 2011. "I am emailing you to thank you for your absolutely delicious pork sausage. Our 8 year old granddaughter Katie would also like to thank you. (Thank you!). Katie is a very fussy eater and it is very hard to please her when it comes to food. She won't eat just anything put in front of her like some kids do. (Well she does eat anything but all the wrong anythings.) The other week I was eating some of your sausage that a relative had brought for us. I have never had any before. I don't remember where she said she had it from but what mouthful I had tasted absolutely delicious. Katie asked if she could "have a little taste please" because she had never had any before either. Well. She had more than a little taste. She ate the whole flippin' lot! What could I do? I couldn't deprive a sweet little 8 year old of your tasty sausage. Because of her fussiness I of course let her have it all. Reluctantly! More fool me although it was for a good cause. Since then she doesn't want to eat any other sausage. She has but she says they aren't as good as yours. You have turned a young fussy 8 year old into someone who likes The Black Farmer Pork Sausage. Just like her grandad (who didn't get much at all!). I discovered your sausages just in the last couple of days and we had sausage in dry bread yesterday which wouldn't usually be anything very special and would've needed ketchup but your sausages really didn't need anything else. I am amazed how little fat drips off into the grill pan! And the sausages cook up lovely and crispy on the outside and so light and tasty in the middle :) Then we had the rest of the pack today with egg (free range), chips, mushrooms and baked beans - so yummy once again and did add some brown sauce to it all :) For years it has been difficult to find sausages over 60% pork at a decent price but yours are a good price for what you get :) I will definitely buy your sausages again and intend to try finding the bacon too and maybe the sweet cheddar."

A local butcher does good local bacon, but no good sausages anywhere. Greed and contempt for the British shopper from British farmers had destroyed the British sausage. Couldn't care less about that - wondered is this one of those politically correct things I loathe so much ? Thankfully it wasn't. October 16th 2010. "I wanted to write to you to let you know what I have been doing throughout 2010. It all started Christmas 2009, when my brother in law bought me your recipe book for Christmas. I was not really much of a cook previous to this, I was not adventurous in the kitchen and I did not really appreciate food. Anyway, I decided as a New Year resolution I would learn to cook.
"New Year came; I was in Rome at the time, sitting on a beautiful roof terrace with my brother. We were discussing my New Year resolution on learning to cook. I decided that once a month I would cook a new meal, from your book. My brother then suggested; that in order to keep up with this, I should have a monthly dinner party (and obviously invite him on every one). So that is what I have done. I have had such fun cooking from your book, my guests have had fun as well, you are quite a name now within my family and friends!
"I would just like to say thank you for creating such a fantastic book, every meal I have made, I have enjoyed cooking and most of all eating! I now love cooking and entertaining my friends. My friends and I have decided to continue with monthly meals, although they will be alternate next year, it’ll be nice for me to be the guest sometimes. I still have November and December this year. In November, I am thinking of doing either Baked Trout in a Salt Crust or Crispy Roast Duck with Mango and Chilli sauce.

But we are so glad we can get Black Farmers Sausages just down the road in Budgens - unless they are sold out. Plus they are the best sausages I have ever eaten. They are far better then the gluten free ones from Tescos, even though price wise they are more expensive you dont need as many because they are more filling. When we have bbq's everyone trys to steal our sausages cause they look so good. It would be great to be able to get them in more shops. Especially when i got away visiting friends."

I am on the Atkins diet now and these are just so tasty and cook well, keep their shape and score over 100 percent in all categories. I usually do not like the run of the mill UK sausages due to the way they are made with all kids of fillers, preservatives, colouring and other "enhancements". However yours are pure and they do not shrink or shrivel up in the pan either.

I think they were far superior to the Duchy of Cornwall ones I also tried, I think your combination of seasoning was much better than theirs, I liked the texture too....just right not too coarse, not too soft, they cooked well too. The skins kept their shape and blended with the meat, not like some I have tried where the skins linger long after the meat has gone and are too chewy!
