CRISPY PORK BELLY ROAST
Raised without Antibiotics
1 x The Black Farmer Raised without Antibiotics Pork Belly Joint
4 tbsp dark soy sauce
small knob of fresh ginger, grated
1 tbsp sweet chilli sauce
1 spring onion, finely chopped
Rub the pork with coarse sea salt crystals. Pre-heat the oven to maximum setting. Place the pork skin side up on a rack over the roasting tin. Roast on this high heat for 10 minutes then be sure to turn the over down to 180C/160C fan/gas mark 4., then leave to cook for 1.25 – 1.5 hours. If after this time the skin isn’t crisp, turn the heat back up to 220C/200C fan/gas mark 7 and cook for a further 20 minutes or until crisp. Leave to rest for a good 10 minutes.
While the pork is cooking prepare the dipping sauce. Mix all the ingredients together in a small bowl. Cut the pork into bite sized chunks, and serve with rice and vegetables of your choice.
